About Substitute Ratio

Substitute Ratio is a small reference for two quick questions in the kitchen: how long something keeps in the fridge or freezer, and what to use when the recipe calls for something you do not have. Search results for both are full of numbers that disagree with each other and rarely say where they came from.

We start from charts published by university Extension services, which are written for home cooks and have been reviewed and reprinted for years. Every table and card shows which charts it came from, which page, and when we last checked. Where the charts disagree, you see each version. Approximate gram weights on the substitution cards come from USDA data.

Substitute Ratio is independent. It is not affiliated with, endorsed by, or run on behalf of the University of Illinois, Colorado State University, Mississippi State University, Clemson University, the University of Idaho, Oregon State University, Washington State University, the USDA, or any food brand or manufacturer. Their names are used only to credit the source of each figure, and no one pays to be listed.
