Out of half-and-half? Use evaporated milk
Both charts we use print the same swap for half-and-half: evaporated milk, used straight from the can without adding water.
Colorado State’s chart also lists a butter-and-milk mix. No second chart we use prints it yet, so it is not on this page.

Grams are volume-to-weight estimates from USDA FoodData Central (SR Legacy): Milk, canned, evaporated, with added vitamin D and without added vitamin A — 1 cup = 252 g. Blank means the chart does not say which kind to use, or the unit is not a volume.
Before you swap
- Use it undiluted. Both charts list evaporated milk thinned with an equal amount of water as a swap for regular milk, not for half-and-half.
