Raw pork and lamb: chops and roasts in the fridge and freezer

Clemson prints one line for pork roasts and chops together, and one for lamb. Pacific Northwest Extension splits roasts and chops into separate lines, and its freezer times for them are not the same.

So the fridge column matches everywhere, while the freezer column shows where a single Clemson figure meets two different Pacific Northwest ones.

✓ 2 sources checked per row A single figure means both charts print the same time. Red cells show each chart’s figure where they differ; we do not average them.

Good to know

  • Pacific Northwest Extension groups veal with pork for roasts and with lamb for chops. We list pork and lamb here because those are the lines Clemson also prints.

Both charts give these times for best quality and call them guidelines, not hard limits. How the rows are matched: our method. Spotted a row that does not match its chart? Tell us and we will recheck the original.
